In this fatwa:
Some jurists view that zakah administrators can take a fixed share from the zakah money they collect.
Answering your question, Dr. Jasser Auda, Professor and Al-Shatibi Chair of Maqasid Studies at the International Peace College South Africa, states:
Allah the Almighty mentioned zakah administrators as one of the recipients of zakah. It states in the Quran:
{Zakah expenditures are only for the poor and for the needy and for those employed to collect [zakah] and for bringing hearts together [for Islam] and for freeing captives [or slaves] and for those in debt and for the cause of Allah and for the [stranded] traveler – an obligation [imposed] by Allah . And Allah is Knowing and Wise.} (At-Tawbah 9:60)
Some jurists view that zakah administrators could take up to 18% of the money they collect. The rate is the decision of the administration of the zakah organization.
If the zakah administrators volunteer their work, this would be better. But if they are making a living from this job, then they can take up to 18% or 12.5% from the money they collect.
If the zakah administrators get a salary, then they cannot take a share of the zakah. If they do not get a salary, then the share they get from the zakah is how they are compensated.
Almighty Allah knows best.
